Give the people what they want; and that goes for wines at the holidays! For gifts or a holiday beef dish, what people want is Cabernet Sauvignon. California and Cabernet are almost synonymous. The King of Red Grapes account for the most acres planted and most gallons produced in the Golden State. It’s grown in many of California’s A.V.A.s but my favorite spots for great Cabernet wines are the Alexander Valley in Sonoma County, the Napa Valley and Paso Robles in the Central Coast. This key Bordeaux varietal enjoys an exalted status for a good reason; it is rich, dark, extracted, fruity and complex. Few wines go better with a sizzling steak or a succulent tenderloin with garlic mashed potatoes than a good old Cabernet Sauvignon.

“Grapes were handpicked at the peak of ripeness, underwent total destemming and a very gentle crush to ensure a large proportion of whole berries were left in the must. Fermentation occurred in stainless steel tanks with native yeasts and maintained at the ideal temperature to aid in the extraction of flavor and color. The wine was pressed off its skins at dryness before being racked to lightly-toasted American Oak (100% new) where it gently aged for eight months.”

Sebastiani Alexander Valley Cabernet Sauvignon 2016

Floral currant scents flatter this wine with gamey sweetness even as its structure is lean, with some bitter mineral intensity gripping the finish. It’s tightly wound and red fruited, with a cactus-like green edge. A substantive take on the Alexander Valley: generously fruited, tightly built, delicious with a salad of duck confit.
